I had a craving ya’ll. For Asian! It’s still simmering in the skillet in the photo above. I had potatoes, carrots, chives, bell peppers, chili pepper flakes, all at home. Oh and threw in some pineapple. Ran to the food store for the other ingredients, red Thai curry paste, peanut oil, fish sauce, coconut milk, etc. I made some white rice really quick to go with it and voila! It was delish!

Looks like tom yam soup! Past few days lunches were simple as I often had to rush to visit my mum in the hospital. Now, it is slowly back to normal. Eating for me is no more about nice food, because I realize that nice food which usually taste a lot better tends to be bad for health in the long run. I just limit my choice to simple food,such as fish soup with noodle, chicken rice, or just rice with 3 vegetable dishes.
Trying as much to remain healthy as I can because hospital bills are terribly high these days. Better to die fast than to be chronically ill!
